Herb-Roasted Chicken
This Herb-Roasted Chicken recipe features the delicious, tender meat from our pasture-raised chickens, seasoned with fresh herbs and roasted to perfection. It’s an easy, one-pan dish that’s perfect for family dinners or special occasions.

Directions

Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 3 tbsp olive oil
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • 1 cup chicken broth (optional, for extra flavor and moisture)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels. Rub the outside of the chicken with olive oil, then season generously with salt and pepper.
  3. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs.
  4. Place the chicken in a roasting pan, breast-side up. Optionally, pour chicken broth into the pan to keep the chicken moist.
  5. Roast the chicken in the preheated oven for 1 hour to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  6. Let the chicken rest for 10 minutes before carving and serving.

Tip: Serve with roasted vegetables or mashed potatoes for a complete meal.
