Pastured Pig Carnitas
These tender and juicy carnitas are made with our pasture raised pigs, slowly cooked with aromatic spices until perfectly shredded. It’s the ideal recipe for tacos, burritos, or a delicious bowl.

Directions

Ingredients:

  • 2 lbs pork shoulder, trimmed and cut into large chunks
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 orange, cut in half
  • 1 lime, juiced
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup vegetable broth or water
  • Fresh cilantro, for garnish
  • Corn tortillas, for serving

Instructions:

  1. In a large slow cooker, combine the pork shoulder, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Squeeze the juice of the orange and lime over the pork and add the halved orange pieces to the pot.
  2. Pour in the vegetable broth or water, then cover and cook on low for 3 hours, or until the pork is fork-tender and easily shreds.
  3. Remove the pork from the slow cooker and shred it with two forks. Discard any bones and the orange halves.
  4. Heat a skillet over medium-high heat and add the shredded pork. Cook for 5–7 minutes until the edges are crispy, stirring occasionally.
  5. Serve the carnitas on warm corn tortillas, garnished with fresh cilantro, and top with your favorite salsa, avocado, or a squeeze of lime.

Tip: Serve with Mexican rice and beans for a complete meal.
